Road trip snacks

I’m going on a trip with my friends at the weekend. Here are some good ideas for road trip snacks.

I would always suggest packets of crisps as they’re quick and easy but if you want a healthier alternative maybe try vegetable crisps or apple crisps.

Trail mix is another popular choice for a road trip snack for a fun alternative you could add rolos or other chocolate that you want to. Also if you want the trail mix to be healthier maybe try unsalted nuts and take out the chocolate. You could use almonds, pumpkin seeds, cashews, or any other nut. Then add dried fruits such as raisins, banana chips, cranberries, or any other kind of dried fruit you like. If you want to add something sweet to your trail mix maybe add dark chocolate chips.

Easy to eat fruits are good as well such as; bananas, apples, grapes, oranges, blueberries, and other various fruits. You could also have carrot batons which are easy to eat and handy. Juice or water are good additions for road trip snacks.

Cake bars are nice and as they are individually wrapped which makes it easier to store.

What to do with your leftover Easter chocolate

Lets face it it’s probably unlikely we have left over Easter eggs but you may have gone crazy and bought a ton of Easter eggs in the sale after Easter. That’s ok don’t feel bad or ashamed we all like a good deal and chocolate.

One of my favourite things to make using leftover chocolate is cookies with broken up Easter eggs inside instead of chocolate chips. Here’s a link to a cookie recipe, just remember to add your Easter chocolate instead of chocolate chips. Cookie Recipe.

As well as cookies I also like to use the leftover chocolate as a garnish for my brownies or cupcakes. You could even use your creme eggs in a brownie and top it off with mini eggs on top of some chocolate icing using melted chocolate Easter eggs. I’ll add a basic brownie recipe here. Basic Brownie Recipe.  I have also found a couple of Easter brownies you could use for some inspiration for your brownies. Easter Brownies 1 and Easter Brownies 2.

You could use your leftover chocolate spice up any normal baked goods recipe that I haven’t mentioned such as; cake, Cheesecake, Fridge cake, Tiffins, Rocky road, caramel shortcake, nest cakes, and many many more. Anything you can think of experiment with your baking. You could even make Easter bark. Happy belated Easter and enjoy your baking.

Pizza Pittas

I make Pizza pittas when I’ve had a really big lunch, or a roast dinnerfor lunch and I’m hungry in the evening. I’m usually tired and hungry, so this is the easiest kind of snack for me to make quickly and it’s tasty.

Pack of 4 pittas

BBQ sauce (you can use tomato paste or ketchup as an alternative)

Cheese (i use grated cheddar but you can use any cheese)

Toppings (optional)

(Add any toppings you want to)

Preheat the oven at 180°C.

First you need to get your pitta bread. Then you need to put bbq sauce ontop of the pitta and your chosen toppings on top of the sauce. Then put the cheese ontop on the toppings.

Put the pittas in the oven for 5 minutes or until cheese has melted.

Alternatively you can put the toppings inside the pittas for a different kind of pizza pitta.

Brownie recipe

Brownies are amazing so I thought I would share one of my favourite brownie recipes. This is a classic brownie recipe but you can add anything extra and experiment with things to put inside the brownies like white chocolate chunks or Oreo cookies. As well as this you can put any icing on top such as; peanut butter, salted caramel, or even creme eggs.

The link to the recipe is here:

I will also post the recipe below if that’s easier for anyone to read. I don’t own this recipe or the writing below.

Preparation time: 15 minutes
Cooking time: 45 minutes
145g unsalted butter
60g good quality dark chocolate
200g caster sugar
2 beaten eggs
75g dark or milk chocolate chips
30g plain flour
1/4 tsp of salt
 1/2 tsp of vanilla extract
1. Preheat the oven to 170C. Line the baking tin with greaseproof paper. Greasing the tin with butter will not be enough when you’re baking anything with a chewy centre, so it is important to line the baking tin with greaseproof paper.
2. Put the dark chocolate chunks and the butter in to the same bowl. Melt this over low heat and stir with a wooden spoon until melted.
3. Once the chocolate and butter have completely melted, put this bowl aside to let it cool down completely. Then add the sugar and stir well.
4. Add the beaten eggs and vanilla extract into the bowl and stir until smooth.
5. Next, add the chocolate chips, flour and salt into the bowl and lightly fold in the mixture. Don’t beat the mixture too heavily, keep it light and airy as you can. You don’t want to over-beat this part.
6. Pour the mixture in the lined cake tin and tap the sides a couple of times to get rid of air bubbles.
7. Place the tin in the middle of the oven at 170C and bake for 45 minutes.
8. After 45 minutes, check to see if it’s cooked by sticking a toothpick in the middle of the brownies. If it’s baked, the toothpick should come out clean.
9. Let it cool in the tin for 15 minutes and then remove it on to a cooling rack. Leave it to cool down completely before cutting in to it. Cut to size as desired. I’ve gone for 16 little squares.
Finally, enjoy your chewy chocolate brownies! They will go very quickly, every last crumb will be gone before you know it! But they’re so easy to make, you can whip up another batch in no time! They taste the BEST on the day you’ve baked them if you like the chewy-ness. They will soften up the day after in to a divine melt-in-your-mouth chocolate ganache kind of texture.

How to: make good quality milkshakes

The first thing you need to make a good quality milkshakes is to add 1 pint of ice cream, then to add 2/3 cups of whole milk but slowly so that the milkshake isn’t too thin. Then add ingredients that you want the milkshake to taste like such as; Nutella, Strawberries, Brownies, or banana.

Once all your ingredients are prepared and ready, place the ingredients into a blender and then blend them together. Then pour and serve the milkshake, you can use a cold glass from the freezer to keep the milkshake cool. You can make the milkshake fancier by adding whipped cream and dding toppings such as; chocolate shavings or any sauces that would compliment the milkshakes flavour.

My Favourite dessert recipe

My Favourite dessert recipe is S’more’s Pie.

  • 1 stick Softened Butter
  • ½ cups White Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • 1 cup Graham Cracker Crumbs
  • 1 teaspoon Baking Powder
  • 7 ounces, weight Container Of Marshmallow Creme
  • 8 whole (1.55 Oz Bars) Hershey’s Chocolate Bars, Unwrapped
  • 1 cup Marshmallows
  • ¼ cups Chocolate Chips

Preheat oven to 350°F and spray a 9″ pie pan with baking spray.

In a large bowl beat butter and sugar together until combined, then add egg and vanilla and stir them in. Stir in flour, graham cracker crumbs and baking powder.

Divide the dough in half. Press half the dough in the bottom and up the sides of the prepared pie pan. Evenly spread the Marshmallow Creme over the bottom crust. Separate chocolate squares and place on top of the Marshmallow Creme. Place 1 cup of marshmallows on top.

Using the remaining crust, pat sections of dough on top of and around all the marshmallows (they will still show through and that is great!). Sprinkle with 1/4 cup chocolate chips, then bake 20 minutes until lightly browned.

Remove pan from oven and set it on a wire rack.

The recipe comes from the link below from an amazingly talented person who I am so happy I found so that I can enjoy this amazing dessert when ever I want.
